over fifteen years of experience working in front of burning ovens and steaming stoves have taught me a few things:

 

  • i will find and cook with the freshest and best quality ingredients (quite the chore in this city forsaken by the gods/goddesses of food and drink).
  • i will not freeze food (unless it's ice-cream, or semifreddo, or parfait, or granite. only exceptions create rules).
  • i will respect the death of animals, for your and my sake, and revere them by using as much from them as i possibly can.
  • butter is good for you. 
  • i will stop cooking professionally before i use corn starch.
  • i will not replace ingredients without letting you know.
  • i will honor your requests, even if i disagree with them.
